Petit Apple Pies

Mmmmmmhhhhhh Apple Pie.
There is nothing better than the crunchy crust and the caramelized apples of a warm, home made Apple Pie.
I just made some mini ones.
Served with vanilla ice you can´t beat it.

Apple Pie Crust

(about 6 servings)

1 1/2 cups Flour
1 1/2 tbs white sugar
3 tbs cold water
1/2 cup salted real butter

1.          Combine flour and sugar in a large bowl.
2.          Cut the butter and add to the dry ingredients.
3.          Stir in cold water, until the crust mixture forms a ball.  
4.          Wrap dough into plastic and let it chill for at least half in hour in the
5.          Roll dough to a uniform thickness and cut out small circles for the
             mini tart or mini-muffin pan. 
6.          Place one dough circle into pie plate and press into form. 
             trim excess dough around the edges.

 Apple Filling:

3 apples
1/2 cup white sugar
2 tbs lemon juice
1/2 tbs cinnamon

7.          Peel and cut apples into small cubes.
8.          Mix apples with white sugar, lemon juice and cinnamon in a bowl.
9.          Place apple mixture in the pie shells.

10.        Place horizontal and vertical strips, of dough on top of the pies.

11.        Preheat the oven to 425° F and bake for 25-35 minutes.
