Sour makes me happy and lemon cake makes me smile;-)
Especially mama´s lemon bundt cake.

mama´s lemon bundt cake
Ingredients:
1 1/8 cups butter
1 cup sugar
vanilla extract
grated peel and juice of 1 lemon
pinch of salt
4 eggs (medium)
1 2/3 cups flour
3/8 cups cornstarch
2 teaspoons baking powder
2 tablespoons sliced hazelnuts
1 1/4 cups confectioner´s sugar
Direction:
Preheat oven to 350°F. Cover bundt pan with bake spray and dust with flour.
In a bowl blend butter, sugar, salt, grated lemon peel and vanilla extract creamy.
On medium speed add eggs, until well combined and smooth.
Mix flour, cornstarch and baking powder together and add to the wet ingredients.
Continue mixing for about 2 more minutes until the batter is
smooth and lump free.
Bake the cake in the center of the preheated oven for 40-50 minutes, or until the cake
is lightly browned and a toothpick inserted into the center comes out clean.
Cool the cake in the pan for 10 minutes, and then turn out onto a wire rack to finish cooling.
For the lemon frosting stir together 3 tablespoons of lemon juice and confectioner´s sugar
to a smooth mass.

Glaze the cake with the lemon frosting, sprinkle with sliced hazelnuts and let dry.
