blushed greek yogurt cake

Red currants and blackberry jam meets creamy-white greek yogurt.
A crispy oatmeal crust let the greek blush all over;-)
Topped with the last juicy berries of the summer, this fluffy
cake is a never ending summer dream...

Rote Johannisbeeren und Brombeermarmelade treffen auf
cremig-weißen, griechischen Joghurt.
Ein knuspriger Haferflockenboden lässt den Griechen über und
über erröten;-)
Belegt mit den letzten saftigen Beeren des Sommers, wird dieser
luftige Kuchen zu einem endlosen Sommertraum...

Was bringt dich zum erröten?



blushed greek yogurt cake
(for a loaf pan)

Ingredients:

for the crust
150 g oatmeal cookies, crumbled
50 g almonds, finely ground
55 g butter, melted

for the blushed yogurt
8 leaves gelatin
100 g sugar
450 g greek yogurt
100 ml whipping cream
250 g red currants + twigs for decoration
3 heaped tablespoons jelly (I used blackberry)

Directions:

for the crust
Rinse out loaf pan with cold water and line wet pan with plastic wrap.
Clean red currants and let dry on a paper towel.

Transfer oatmeal cookies to food processor and ground to fine crumbs.
In a medium bowl mix together oatmeal crumbs, almonds and melted butter
and stir until everything is well combined.
Transfer mixture to loaf pan and press into the form, using a spoon.
Refrigerate for 30 minutes.

for the blushed yogurt
In a bowl stir yogurt and sugar creamy and set aside.
Beat whipping cream stiff, until soft peaks form.

Soak gelatin in cold water for about 5 minutes.
Press out water. 
On medium heat dissolve gelatin in a small sauce pan.

Add 2 tablespoons yogurt carefully to the dissolved gelatin.
Now add gelatin mixture to the remaining yogurt and stir in, until well combined.
Gently fold in whipped cream.
At last mix in red currants, and pour mixture into loaf pan.
Refrigerate for about 4 hours.

Microwave jelly for a few seconds, until molten.
Pour jelly over yogurt cake and decorate with red currant twigs. 

Enjoy and blush all over...

That´s the best thing to do, when you just turned 34, like I did;-)

I think that´s a really good reason for cake;)

Deep black blackberries topped on a bittersweet chocolate bed.
Just delicate and likewise so simple.

Tiefschwarze Brombeeren auf einem bittersüßen Schokoladenbett.
Einfach köstlich und zugleich so einfach.



blackberry oreo chocolate tart
(for a 18 cm diameter springform pan)

Ingredients:

for the crust
16 oreos (175 g)
50 g butter, melted

for the chocolate ganache
100 ml whipping cream 
100 g bittersweet chocolate, chopped

for topping
150 g blackberries

Directions:

crust
In a food processor grind up oreo cookies, with filling to fine cookie crumbs.
Mix oreo crumbs and melted butter in a bowl, until well combined.
Line springform pan with plastic wrap.
Transfer cookie mixture to springform pan and press mixture into the form, using a fork.
Refrigerate for about 15 minutes.

chocolate ganache
In a small saucepan bring whipping cream to a boil.
Set aside and add chopped chocolate. 
Stir until chocolate is completely dissolved.
Pour chocolate ganache onto chilled crust and refrigerate for 3 hours
or until chocolate is set.


Garnish with fresh blackberries and enjoy the liaison between dark chocolate
and blackberries...

scharfer feta dip

Zutaten:
115 g Feta, zerkrümelt
115 g Frischkäse
1 Knoblauchzehe, gehackt
1 Teelöffel Ajvar
Chili, schwarzer Pfeffer, Salz zum Würzen

Zubereitung:
  • Feta und Frischkäse in eine Schüssel geben und cremig rühren.
  • Knoblauch und Ajvar unterrühren.
  • Mit Chili, Pfeffer und Salz nach Geschmack abschmecken.
Guten Apettit!

My icebox cake looks just like a zebra, caught between layers of chocolate and whipping cream;-)

Icebox Kuchen ist ein einfaches Rezept, ohne Backen und sooooo Lecker.
Mein Icebox Kuchen sieht aus wie ein Zebra, gefangen zwischen Schichten von Schokolade und Sahne;-)


Zebra chocolate icebox cake
(inspired by larecetadelafelicidad)


Ingredients:
icebox cake
10 cocoa cookies with vanilla cream filling (Oreo)
1/3 cup milk
3/4 cup whipping cream
2 teaspoons sugar

chocolate frosting
1/2 cup whipping cream
4 oz chocolate, chopped

3 tablespoons chopped almonds

Directions:

For the icebox cake
In a medium bowl whip together whipping cream and sugar until stiff and soft peaks form.
Dip each cookie into milk, only for a few seconds, the cookies should only be dipped, not soaked.



Spread whipped cream on one side of each cookie and stack them together in a line. (picture below) 



Transfer cookie snake to a plate lined with baking paper and cover cake completely with remaining whipping cream.
Place in freezer for about 2 hours, or until whipping cream is set.



For the chocolate frosting:
In a small saucepan bring whipping cream to a boil. Add chopped chocolate and let rest for a few minutes, stir until dissolved.
Take cake out of the fridge and cover completely with the chocolate frosting.
Sprinkle with chopped almonds and store for another 2 hours in the freezer or until you are ready to enjoy...

Cut icebox cake diagonal to admire the beautiful zebra look inside.
